Have you heard of The Fresh 20? Basic concept is you purchase only 20 items at the market and have dinner for the family for the week.

I don't follow it all the time but do subscribe for when I am trying to be on budget or just don't have the creativity to menu plan.

This week:

Monday: Szechwan Turkey Stir Fry
Tuesday: Lemon Pepper Salmon with quinoa & asparagus
Wednesday: BLT Salad
Thursday: Cheesy Stuffed Zucchini
Friday: Broccoli Quinoa Bake

For breakfast tomorrow we are having breakfast casserole. But we sometimes have it for dinner. Cooked Hash browns (I use homemade fried potatoes). Cooked meat of choice (ham, sausage, hamburger, even hot dogs). Sauteed bell peppers and onions. Cheese, beaten eggs. Combine all in casserole dish and bake until eggs are cooked.

This week seems to be a day-at-a-time thing. Some weeks I've got it all together, this week wasn't one of them.
For breakfast we had French Toast, grapes and milk. Lunch was Ham/cheese on pita, cantaloupe, red pepper strips and milk. Snack will be Greek yogurt and orange slices.

I had chicken and pasta on the menu for lunch tomorrow but it turns out I'm only going to have 1 dcg here and she's not crazy about chicken.

I get bored with my menus too. I have to feed over 130 in my daycare and it gets expensive! I'm also the only cook.

I used to take up hours of my time googling, researching, flipping through taste of home magazine cookbooks, etc, etc.. But about a year ago I came across this amazing site developed by moms....
http://www.superhealthykids.com

It is beyond awesome for me! It's 100% on the healthy side and can be "customed" if you don't like the pre-made plan selection -lets say for morning snack time, you can substitute something else. It is set up to help moms in meal planning but I use it for my day care. The "Breakfast" I use as my morning snack time. "Lunch" is lunch, and "Snack" is my afternoon snack time. I delete "Dinner" because I don't want it included in my grocery shopping list (again conveniently laid out for me and organized!) and then I take a snap shot of it with my iphone and post it on our website to allow the parents to see what their child's menu will be or was for the day, with pictures! My parents all love it and I would never want to go back to my old method and frustration. There is a fee after your free trail but well worth it! And besides, I claim my subscription on my taxes. Win Win for me!
