I made this really yummy rice dish for the kids yesterday and they loved it! Very easy to make and also happens to be vegetarian!
1T olive oil
1/2 yellow onion chopped
about 10 button mushrooms, sliced
a couple cups of broccoli chopped
1 clove garlic minced
1 cup brown rice
2 cups vegetable broth
1 can chickpeas (you could also use cannellini or any other white bean)
Heat medium sauce pan over medium heat, add oil, once hot add onion. Sweat onion for about 3 minutes.
Add in broccoli, mushrooms, garlic, rice, broth and stir together
Bring to a boil, reduce heat, cover and simmer until liquid is absorbed. This took about an hour for me.
Once the rice is cooked, add in beans and stir, leave on burner until beans are heated through.
If you make it ahead, put it in a saucepan to reheat, add about 1 tablespoon of water, cover, and steam for a couple minutes.
This was really yummy, I can see us making it again with different veggies or beans. Maybe some shredded carrots, spinach, etc.

Looks good! I would probably precook the rice and add in once the veggies were almost done.
